Speculoos Cookie Truffles

In more ways than one this treat is so sweet St. Valentine himself would be head over heels. Whether you need a fabulous party dessert or something to put 26 little first graders in a sugar stupor, I've got ya covered.
When whipping up this new creation, I knew I wanted to somehow incorporate Specculoos cookie butter. And what to go better with cookie butter than more cookies!

This dainty little treat is so simple it will leave you stress free and top sweetheart to all of your friends on Valentine's Day. Best part--no baking!
No need to thank me, just promise me you'll try them and spread love and affection this year in a truly favorite way--Desserts! 

Here's the "recipe" 

Speculoos Cookie Truffles

  • 1 bag white chocolate morsles
  • mini nilla wafers
  • jar of Speculoos cookie buter
  • festive sprinkles
First cover a cookie sheet with parchment paper. Next, assemble the cookie sandwiches by smearing a tiny dollop of cookie butter on the flat side of the nilla wafers. Smash the cookie butter down by pushing another wafer on top .

After all of your sammies are made, melt your white chocolate by placing the morsels in a bowl and microwaving in 15 sec intervals on 50% power. Stir in between each interval. Next dip your cookies into the melted chocolate ( I used a wooden skewer to dip) and place on the parchment paper.

Before the chocolate cools, toss your sprinkles on top.

And, voila! Chill or set aside until chocolate hardens. If you have the pleasure of living in the North right now, just pop them outside for a few minutes like I did!

Try not to let the pooch eat them all...
