Margarita Cupcakes and Sushi

Good Sunday afternoon, everyone!
I have to tell you about my less than traditional Cinco de Mayo yesterday.Corey and I went over to our friends' house for a sushi night! I had never had sushi before and had the same weariness as any sushi virgin --ummm, raw fish? But, I tried it and actually liked it. I can see myself venturing out now and maybe trying some different types of sushi!

I would [insert picture here] but I didn't snap any of the sushi ☹

Now I couldn't just let Cinco de Mayo pass and not have something festive, so I whipped up some margarita cupcakes to take.

The verdict was...delicious! The lime and tequila flavors worked perfectly together and I made sure to use 'healthy' doses of Mr. Cuervo when the recipe called for it.

My favorite part was that the tequila was baked in, brushed on top, AND in the frosting so you definitely got the flavor. Too often I taste a fun flavored cupcake and the flavor is nowhere to be found.

I used this recipe from one of my favorite baking blogs, browneyedbaker.

Hope everyone had a great weekend/cinco de mayo!

Thanks Stew and Brenda for a great night!
