Lemon Cake Batter Blondies
adapted from Girl Meets Life: Cake Batter Blondies
- 1 box lemon cake mix
- ¼ cup canola oil
- 1 egg
- ¼ cup milk (splash or two more if necessary)
- ½ cup white chocolate chips
Directions: Preheat oven to 350. Combine cake mix, oil, and egg. Add the milk until all the batter is combined. The result will be thick and dense. Pour (more like scrape out of the bowl with a spatula) mixture into a greased 8 in. cake pan. Bake 25-30 minutes until edges are golden brown. Let it set for 30 minutes before cutting. It's a very gooey-cake battery center.

Now let me back track a little bit and say my weekend is only getting better with these blondies because yesterday to round out teacher's appreciation week, our boosters gave us all Panera gift cards!

I wrapped up my Friday night by seeing The Avengers with Corey. The movie was really good! I loved the balance of humor and action. I would also like to let you know that Captain America and I are getting married.
Mrs. Captain America....yep, that sounds about right!
Now, I'm doing a little relaxing and cleaning. Corey and I are headed out to a minor league baseball game tonight with some people from school!
